Christmas Breakfast Casserole



2 C. shredded sharp cheddar cheese (I used a little more as we like cheese)
1 lb. breakfast sausage, browned and drained
1/4 tsp. each salt and pepper
1 tsp. stone ground mustard
1 1/2 C. self rising flour
1 C. whole milk
4 T. butter
4 eggs

Begin by cutting the butter into the flour using a pastry blender or a fork. Once combined, set aside. In a mixing bowl add the eggs and whisk, add the milk, mustard, salt and pepper. Pour the flour mixture into the egg mixture and using a wooden spoon combine well. Add in the cheese and sausage. Pour the mixture into a 9x13 lightly greased baking dish and bake at 350 degrees for 60 minutes. This can also be mixed the night before and cooked the next morning.
