1/2 C. chopped onion, sauté in the remaining bacon grease till
tender
1 1/2 C. shredded sharp cheddar cheese
5 strips bacon, cooked and crumbled
1 C. plus 2 T. quick cooking grits
1 C. deli ham, chopped
1 tsp. garlic powder
4 T. unsalted butter
2 C. chicken broth
2 C. whole milk
2 eggs, beaten
1 tsp. salt
In a large pot combine the broth, milk, butter and salt. Bring to a low boil and whisk in the grits. Lower the heat and simmer, stirring often, for 5-7 minutes or until thickened. Remove from the heat and add 1/4 C. of the cooked grits to the beaten eggs to temper them. Add the eggs to the pot of grits and combine well. Stir in 1 C. of cheese, garlic powder, bacon, onions and ham. Pour into a lightly greased 9x13 pan. Bake at 350 degrees for 40-45 minutes. Remove and top with the remaining cheese, return to the oven until nice and bubbly. Allow to sit about 5 minutes before serving.
