Chocolate Chip Cookies




Ingredients

1 1/4 cups all purpose flour
1/2 teaspoon baking soda
pinch salt
1 stick softened butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 egg
1 cup semi sweet chocolate chips
Ice cream of choice

Optional extras

mini chocolate chips
melted chocolate
chopped nuts

Directions

Homemade chocolate chip cookies? Yes. Homemade chocolate chip ice cream sandwiches? YES!!!! These cookies are so delicious and even if you don't make the cookies into sandwiches I definitely recommend still making them. Let's get started making these sweet treats! Preheat your oven to 375 degrees F. In a bowl mix together the dry ingredients: flour, baking soda, and salt. In another bowl cream together the softened butter, sugar, brown sugar, vanilla, and egg. Cream together until completely mixed. To the butter mixture add the dry ingredients and mix together until combined. Add the chocolate chips and give one more stir. On a parchment line baking sheet scoop even scoops of the batter evenly spaced out. I use a small ice cream scoop to make sure they're all the same size. Bake the cookies for 10 minutes until golden brown and take out of the oven. Let them cool completely until room temperature, about 20 minutes or so. Once the cookies are completely cooled it's ice cream time! Put a scoop of ice cream on the flat side of the cookie. Put the other cookie on top of the ice cream and squish together to flatten out. If you want to take it one step further like me, roll the outside of the ice cream in mini chocolate chips or chopped nuts, or sprinkles, or anything else you want! You could even dip half of it in melted chocolate if you're feeling really crazy. Put the ice cream sandwiches back on the tray and put the tray back in the freezer. Keep the sandwiches in the freezer until ready to serve! Everyone will be so excited that you made homemade chocolate chip ice cream sandwiches because they are beyond delicious
