1/4 C. chopped nuts (optional)
1 1/2 C. self rising flour
4 really ripe bananas
1/3 C. melted butter
1 tsp. baking soda
1 egg, beaten
1 tsp. vanilla
1 C. sugar
Preheat oven to 350 degrees. Using a potato masher, mash the bananas. Add the melted butter to the mashed bananas, then add the sugar and then the beaten egg. Add the vanilla, then baking soda and last the flour. Stir to combine all ingredients well. If you are using nuts, you would now add them to the mixture. Pour into a well greased loaf pan and bake for approx. 1 hour. Let cool 15 minutes before slicing.
