Ingredients
8 oz. rigatoni pasta
1 lb. mild italian sausage
1/4 C. diced pepperoni
1 small onion, chopped
2 cloves garlic, minced
14.5 oz. can diced tomatoes with juice
8 oz. tomato sauce
1 T. italian seasoning
1 tsp. basil
1/8 C. parmesan cheese
1 C. shredded cheese (I used 1/2 C. each mozzarella & sharp cheddar)
Directions
Cook the pasta according to package directions. In a large skillet, brown the sausage breaking it up with the back of a wooden spoon as it cooks. When the sausage is cooked through, drain well and then add the pepperoni and onions cooking for 5 minutes. Add the garlic and cook for 1 minute. Add the diced tomatoes with juice, tomato sauce, seasonings and parmesan cheese. Simmer for 10 minutes. Drain the pasta and add to the skillet, tossing to coat well. Add in the cheese and stir till melted. Top with a little sprinkling of basil just before serving.
