Chicken Briyani Recipe




Ingredients

Basmati Rice-21/2 cups
Onion -1 large thinly sliced
Tomato-1 big
Green chillies-3
Ginger garlic paste-2tbsp
Mint leaves-1/2 cup
Coriander leaves-1/2 cup
Coriander powder-1tbsp
Garam masala-1tsp
Red chilli Powder-3tsp
Oil-4tbsp
Ghee-2tbsp
Salt to taste
Lemon -1/2
To Marinate Chicken
Chicken -1/2kg
Yoghurt-1/2 cup
Salt -3 tsp
turmeric powder-1tsp
red chilli powder-1tsp
Ginger garlic paste-1tbsp
Freshly Grind:
Cinnamon-1inch
cloves-3
star anise-1
cardamom-2
fennel-1tsp
To temper
Bayleaves-2
Cinnamon- 1inch
star anise- 1
cloves- 3
cardamom- 2
fennel- 1tsp
cumin- 1tsp

Method 

Wash and soak the rice before you start the preparation(minimum 30 minutes).
Marinate the chicken with yoghurt,turmeric powder,chilli powder ,ginger garlic paste and salt.The Longer you marinate,the masalas get infused well in the chicken and also the chicken will be soft.
Take a pressure cooker,heat oil and ghee,once it become hot add bayleaves ,cinnamon,cloves,star anise,fennel seeds,cumin seeds
Add onions and saute till it become golden brown
Add green chillies,Ginger garlic paste and fry it until its raw smell goes
Add Tomato and cook till get mashed completely
Add Mint and coriander leaves and saute for few minutes.
Add the spices chilli powder,coriander powder,garam masala and also freshly ground masalas.saute it well till the raw smell goes.
Add Marinated Chicken and saute it in the masalas.cover and cook the chicken without adding water..the chicken itself ooze out lot of water.
Add water and allow it to boil.
Add the soaked basmathi rice.
Close the pressure cooker and cook for 1 whistle.Reduce the flame to very low and allow to cook for 10 minutes and switch of the heat
Now our delicious Chicken Briyani is ready.

Notes

Adding coconut milk enhances the briyani flavor.
