Mixed Vegetable Kurma Restaurant Style




Ingredients 

Onion- 1 finely chopped
Tomato- 1
Ginger garlic paste- 2 tsp
Carrot-1 big
Beans- 12
Potato – 2 medium
Peas- 1 cup
Chilli powder- 1 tsp
Turmeric powder- 1/2 tsp
Coriander powder- 1tsp
Garam masala- 1 tsp
Coriander leaves-finely chopped
Mint leaves-5 chopped

To grind

Coconut- 1/2 cup
Roasted gram(pottukadalai)- 3tsp
Poppy seeds- 1/2tsp(optional)
Cashewnuts- 1tbsp
Green chillies- 2
Cinnamon- 1/2 inch stick
Cardamom- 3
Cloves- 4

To temper

Bayleaves-2
Cloves-2
Cardamom-2
Cinnamon-1 inch stick
Oil-2tbsp

Method

Grind coconut,pottukadalai,poppy seeds,Cashewnuts,Green chillies,Cinnamon,Cardamom,Cloves in a blender and keep aside
In a pan ,cook carrots ,potato ,green beans ,peas adding enough water and salt.
In a pan,add oil and temper it with Bayleaves,Cloves,Cardamom and Cinnamon
Add chopped onions and saute it until it becomes light brown color
Add ginger garlic paste until raw smell goes
Add chopped tomatoes and saute until it becomes mushy
Add the coconut masala and saute it well for few minutes
Add the spices chilli powder,coriander powder,turmeric powder and garam masala and saute it for a minute
Add the cooked vegetables along with the water.Check for salt and add required salt.Allow it to boil for few minutes
Finally add coriander leaves and mint leaves
Serve hot wit hot roti’s or parathas

Notes
If you want a white color,skip adding red chilli powder,turmeric powder ,coriander powder .Instead for spiceness add extra green chillies.
You can add any vegetables like carrot,peas,potatoes,peas,cauliflower,turnip,soya beans etc
